Vin de Pays de La Cité de Carcassonne
Grape varieties: Carignan, Cabernet Franc, Syrah, Grenache, Cabernet Sauvignon, Merlot and Sauvignon gris.
Age of vines: 25 years.
Vine density: 4,400 vines per hectare.
Terroir: Alluvial gravel soil in the flat part of the vineyard, and clay with boulbenes on the slope.
Viticulture: The soil is regularly ploughed, with earthing up and unearthing around the trunk of the vines, which are trellised. Leaf thinning.
Winemaking: Each grape variety is fermented separately in keeping with traditional methods and using temperature control. 40% of the wine is aged for 10 months in French oak barrels and the rest in stainless steel vats, before being blended.
